Tomato salad with Romanesco and Tulip Quick Bites

Ingredients

  • 4.4 oz Tulip Quick Bites
  • 1 romanesco broccoli
  • 1 cup cherry tomatoes
  • 4 tbsp cooked black beans
  • 1 red onion
  • 10 sprigs lemon thyme
  • 3 tbsp lemon oil
  • 3 tbsp mushroom soya sauce
  • 3 tbsp sesame oil
  • Vegetable oil
  • Salt
  • Freshly ground pepper

Instructions

  1. Cut the Romanesco into bouquets and blanch 2 minutes in lightly salted water.
  2. Slice the red onion and chop the thyme.
  3. Drain the Quick Bites and fry them in oil in a frying pan for 4-5 minutes until golden.
  4. Grill the tomatoes and Romanesco in a pan for 3-4 minutes and toss with beans, red onion, thyme, lemon oil, mushroom soy sauce and sesame oil. Season with salt and freshly ground pepper and serve right away with the fried Quick Bites.
